Eric Bachli is credited with creating some of the best New England-style IPAs in the world. He came to fame as the Head Brewer for Trillium Brewery, where he scaled production and helped turn Trillium into a destination brewery known for big, hazy IPAs and special releases. In August 2017, SixPoint Brewery hired Eric as chief product officer and began designing innovative new recipes only released at the Brooklyn-based brewery… until now! SixPoint just released Dabble, the first limited distribution hazy IPA brewed under Eric’s creative control.
From the first sip I could tell Dabble is a superb, hazy IPA; with its tropical notes, Dabble fits into the hazy IPA spectrum like you would expect, but goes to another level by using experimental hop varieties. Idaho 7 hops offer an initial hit of juicy mangos, passionfruit, and grapefruit, while Sambo and Cashmere hops give a nice blend of orange, coconut, and bananas on the finish. With its medium body Dabble has a fluffy mouthfeel with that perfectly smooth, long finish that makes you want to take another sip. This hop-forward beer still has a ton of depth and complexity that will please any hop head, but with almost no bitterness it’s a great introduction to the true flavor of hops without the sharpness of other IPAs.
I fell so in love with Dabble that I immediately called the distributor and purchased everything they had available. If you set aside the cans I plan on drinking that doesn’t leave a lot, so if this is a style that you would like to try or a you just want a hell of a deal on a superb New England IPA, don’t hesitate – because at just $13.99 a six pack these will be gone before you get the chance to dabble in this mad hop experiment.
