i’ve got an interest in pinterest!

How many of you use Pinterest?  I’ve jumped on the bandwagon. I’ve been pinning my heart out for the last few weeks. I’m using it for both my personal life and my professional one.  Personally, I’m pinning everything from craft ideas to cute shoes to anything photography driven. Professionally, I am scouting recipes of all sorts, pastas to pastries and everything in between. BUT of course the majority of recipes I’m scoping out are those involving CHEESE!

Spring is officially here, the weather has been so lovely in Indianapolis that I’ve been thinking about fresh fruit and chevre (fresh goat cheese); what a great combination, right?! I found this recipe the other night on Pinterest and had to share it with you. It’s a quick and easy appetizer that will get you in the mood for the long, lazy days of summer!

Strawberry & Chevre Bruschetta features fresh strawberries, Capriole chevre, Bella Famigilia Balsamic Vinegar and fresh basil. These flavors blend beautifully and are the perfect addition to your meal.

Strawberry & Chevre Bruschetta
1 cup strawberries, diced
1 tablespoon sugar
1 baguette, sliced on the bias
4 oz Capriole chevre
1 tablespoon olive oil
2 teaspoon balsamic vinegar
¼ cup minced basil leaves
Freshly ground black pepper

Combine the strawberries and sugar in a small bowl; toss to combine. Let the berries macerate for about 30 minutes so that they begin to release their juices. Spread a thin layer of chevre on top of each baguette slice. Top each slice with a spoonful of the strawberry mixture. Drizzle lightly with olive oil and balsamic vinegar. Top each slice with the basil leaves and crack pepper, to taste.
