Shake it up and try add a little zing to your pasta salad with savory blue cheese and sweet caramelized onions. This is a rich and delicious salad that will pair perfectly with anything you’ve got coming off the grill this weekend!
lb pasta shells, cooked and chilled
8 oz sliced bacon, cooked crispy
1 large sweet onion, peeled and sliced thin
1 tablespoon sugar
1 tablespoon unsalted butter
1/4 cup sour cream
1/4 cup mayonnaise
4 oz Maytag Blue Cheese, crumbled
salt and pepper, to taste
canola oil (or olive oil)
In a large pan, sauté the onions with the butter and a small amount of oil. Add the sugar and continue to cook, stirring occasionally, until the onions are a light caramel color. Set aside to cool. Combine the sour cream, mayonnaise, and blue cheese in a small bowl. Crumble the bacon into a large bowl with the cooked pasta and onions. Add the sour cream mixture and mix well. Add salt and pepper to your taste.
Chill for at least an hour before serving.
